As for other ways of using the IKEA effect other then onboarding experiences, I would say there are many services that are doing that. Good examples in my opinion are LinkedIn, Spotify, Netflix and similar. They all get you involved of personalizing your own profile slowly with short tasks and quick choices where you feel that each of them makes a good impact on how your profile and experience is shaping.
In my opinion, utilizing similar approach in product design will be beneficial. Engaging the user to provide additional information by engaging with simple short tasks and then to use it to customize the experience for that user.
Hope this gives a direction at what kind of products employ this principle. I guess analyzing the designs of similar services and what principles are used could be interesting topic for a new article. :)
